- Coriandre et menthe ciselés
- Bourek a la viande hachée :
- 500 g viande hachée
- 1 beau oignon ciselé
- Poivre/cannelle/sel
- 1 cs beurre/2 cs d'huile
- 4 a 5 oeufs
- 1 feuilles de diouls
- huile de friture
- Servez avec du citron
- Pain maison :
- 250 g semouline
- 1 cs rase de levure boulangère
- 1 cc sel
- 1 cc sucre
- 2 cs d'huile
- 150 ml d'eau tiède
- Façonnage :
- 1/2 verre de semoule

- Soupe : (chorba m'katfa)
- Chauffez l'huile dans la marmite, rajoutez viande, légumes, tomate râpée, assaisonnement et faites revenir quelques minutes ensuite rajoutez les pois chiches, couvrez avec 1 litre d'eau bouillante et laissez mijoter a feu doux pendant 30 min après rajoutez la tomate concentrée, le bouquet d'herbes fraiches et rajoutez 1 litre d'eau bouillante (+ -) et laissez cuire a feu moyen.
- A la fin de cuisson de la soupe rajoutez la vermicelle, remuez et comptez 3 a 5 min et la soupe et prête, parsemez de coriandre et de menthe ciselés et coupez le feu.
- Servez la soupe avec du citron.
- Bourek a la viande hachée :
- Chauffez le beurre et l'huile dans une marmite.
- Rajoutez vaiande hachée, oignon, assaisonnement et faites revenir quelques minutes ensuite couvrez et laissez cuire a feu doux pendant 1 heure en rajoutant de l'eau si besoin,sinon laissez mijoter sans rajouter d'eau.
- Une fois la viande hachée cuite et y'a plus de sauce battez les oeufs légèrement avec un peu de sel et de poivre dans un saladier et versez sur la viande, remuez délicatement et des que les oeufs sont cuits retirez hors du feu et laissez refroidir.
- Si vous n'avez pas le temps et que vous êtes pressez, mettez la farce dans une assiette pour que ça refroidisse plus vite, pour éviter aussi de déchirer la feuille de dioul ensuite faites le pliage des bourek en forme de triangles ou cigares.
- Cuire dans un bain d'huile chaude a feu moyen des deux côtés ensuite égouttez dans une assiette sur du papier essuie-tout avant de les déplacer dans une autre assiette.
- Servez les boureks avec du citron.
- Pain maison :
- Dans la cuve du pétrin mettez eau tiède, levure boulangère, sucre ensuite mélangez, couvrez et laissez la levure agir pendant 5 min.
- Après rajoutez le reste des ingrédients et Petrissez pendant 10 min jusqu'à obtention d'une pâte souple, lisse et un peu collante.
- Couvrez la pate et laissez lever.
- Dégazez la pâte, formez une boule et roulez la dans la semoule.
- Disposez la boule de pâte sur un plateau beurré, aplatissez avec les mains, couvrez et laissez lever.
- Enfournez a 200 degrés pendant 20 min (+ -).
